At the wedding last weekend they had these amazing curried chicken sandwiches. I'm looking for recipes online but they all kind of suck. It was sort of like chicken salad but kind of sweet, with raisins and celery. Any ideas?

My mom used to make curried chicken salad with raisins, toasted almonds and stuff. She used mayonaise and curry powder and a bit of plain yogurt i think, mized up with the raisins, chicken, celery and some salt and pepper to taste. Almonds and some shredded mozzerella on top! K thx!

Yeah, that's pretty much the idea, though I personally use dijon mustard instead of yogurt and haven't tried it with cheese.

I've found this works really well with canned tuna as well, and is potentially the best thing you can do with the stuff.

Here is the recipe I use

4 skinless, boneless chicken breast halves - cooked and diced
1 stalk celery, chopped
1/2 onion, chopped
1 small apple - peeled, cored and chopped
1/3 cup golden raisins
1/3 cup seedless green grapes, halved
1/2 cup chopped toasted pecans
1/8 teaspoon ground black pepper
1/2 teaspoon curry powder
3/4 cup mayonnaise

I always use way more onion and way more curry powder, sweet apples, not sour ones and usually quadruple the recipe and am frequently found on the floor in a food-induced coma hugging a mammoth bowl of the stuff with a wooden spoon sticking out of my mouth.
